What makes the XO pizza oven stand out? This is a larger oven, so you have a lot more space for cooking multiple things at once if you were preparing an entire meal. This is a woodfired oven too, so space will matter since your logs will take up a lot of the room.
This model comes with a glass window to keep heat in. Some manufacturers make their pizza ovens with stainless steel doors for the oven, but then you wouldn’t be able to monitor your food during the cooking process. The door also has holes, so your fire will get ventilation from the front.
To the left of the oven is a pull-out stainless-steel workstation. There’s plenty of room here to do your prep, or even have your food waiting to go in the oven. You could easily set up a pizza building station on this, and just fire them straight into the oven. Since you’ll be using a lot of wood for fire management to keep your oven hot, there is two shelves underneath of the main unit where you can store your logs. You could also place cookware under here like cast iron pans, or stainless-steel trays.
To the right of the oven is a rack where you can hang all of your tools and brushes used in the oven. You can hang your pizza peel and turner here, your brush, and any fire stoking tools. It is tight and compact to this side of the oven, making them easy access but also organized.
How is this oven built to retain heat and keep the fire going? The inside of the oven is constructed with ceramic fiber which holds heat. These are porous tiles that capture heat and retain it. In the middle there is a chimney that goes from the inside of the oven out to the top.
This vent will ensure your fire isn’t smoked out, and that the smoke is funneled out through the top. This chimney also helps with unwanted buildup on the outside of your pizza oven. We made a classic Neapolitan pizza in this oven to show you how quick and easy it is to make pizza in just minutes.
You could make anything from pasta with meatballs, to rustic style hoagies in this. Don’t think you’re limited to making just pizza. Every dish will have that wood fired, smokey flavor to it in your pizza oven. The pizza we made ended up with perfect golden-brown crust, which really packed in the wood fired flavors.
