    How to Light the XO 40" Wood Fired Pizza Oven

    Most standard pizza ovens will have a dome shape with a chimney for ventilation out of the top. This helps to keep the heat in your oven and vent it properly so you’re not smoking out your oven or your backyard. Start by setting your wood up in the center of the oven. Place a couple of big dry logs down in the middle of the oven. You’ll want to build on top of these with smaller pieces, and if you need a starter like wax cubes, you’ll want to put that in the middle.

    Build your kindling and smaller pieces of wood on top, but don’t build too much to the point where there isn’t space between your logs. You want there to be space so the flames get air. This will be right under the vent once it’s lit, giving the flame the right amount of ventilation. This will heat the big tiles in the middle of the oven, making the inside hot.

    Light the middle of your pile using your fire starter or matches. Keep in mind that wind will affect your flames depending on where you place your pizza oven. You want to place this facing away from the wind, so your fire doesn’t blow out. The smoke also shouldn’t blow directly onto your home.

    This pizza oven comes with a glass or stainless steel removable door; you can place this over the front to keep the wind out. Leave it cracked so some air gets into the inside of your oven and you don't extinguish the fire.

    Fire management is important for keeping your oven hot, but also your heat even. Once you have your initial fire started, you can add more logs and kindling on top. You can also push this to the back of your oven to ensure every part of the oven gets hot.

    Depending on the size of what you’re cooking, you’ll want to move the wood to one side, or split it on both sides. Bigger dishes will probably need to have all of the wood on one side. For pizzas it is best to split the wood and have a little on both sides. Once you move the wood, you’ll probably have ash and embers in the open space of your oven. Take your oven brush and brush this away so you’re not cooking your food on this.
