Wood Fired Pepperoni & Cheese Calzone | XO 40” Wood Fired Pizza Oven
Making a calzone in your pizza oven is just as easy as pizza. Calzones have never been as simple with the help of the XO 40" Wood Fired Pizza Oven.These are just going to be simple pepperoni and cheese calzones, but you can make any other type of calzone you want.
Start by stretching your dough with the help of some flour. You can press this down with your hands or use a roller if you choose to. This doesn’t have to look perfect, but you do want it flat enough that you can fold over the one side over your toppings once you add those.
Make sure to preheat your over to about 800 to 850 degrees. We are going to use a low moisture mozzarella and a bit of pepperoni. Cut these into chunks, or logs, just make them thin enough that they’ll cook in the short time they’re in the oven. Before folding the dough over, add a bit of marinara sauce and some sun-dried tomatoes. Our sauce and sun-dried tomatoes balance out the savory flavors from the cheese and pepperoni.
You could go any way you want with calzones. You could add ricotta, or even mushrooms; anything you would also top your pizza with. Now fold the dough over and press it into the dough on the other side to seal your ingredients in the middle. You want the inside to get heat and vent, so poke a couple of holes into the top of the dough so everything inside cooks as well.
Take your peel and place this in the middle, to the left, wherever you have the most heat, place this close to the heat. You’ll want to use a turner to rotate this every 30 to 45 seconds as well. This will ensure that all sides of the calzone will be evenly golden brown. After a few minutes place this over on the cooler side, so the cheese and pepperoni melt and cook completely.

- ½ lb pizza dough
- 2 oz mozzarella cheese
- ¼ small pepperoni roll
- ¼ cup marinara sauce
- ¼ cup sun-dried tomatoes
Method:
- Preheat pizza oven on 800 to 850 degrees
- Stretch dough until flat
- Place cheese, pepperoni, marinara sauce, and sun-dried tomatoes on dough
- Close dough around toppings, and press into other half of dough
- Make holes in the top of the dough
- Cook for 5 to 6 minutes, rotate every 30 to 45 seconds
