Chef Anthony Marino shares another one of his favorite tailgate recipes: Smoked Salmon Bacon Bombs
This week, we’re taking salmon, wrapping it in bacon, adding some smoky spice and taking it out to the Weber grill to make the ultimate tailgate tailgate appetizer.
Smoked Salmon Bacon Bombs
(Serves 8)
Ingredients:
- 2 skinless salmon filets cut into 8 pieces
- 8 slicec thick cut bacon
- 2 tablespoons honey garlic rub
- 1 tablespoon mustard
- 2 tablespoons BBQ spice seasoning
- 4 oz. BBQ Sauce
- 1 tablespoon black pepper
- optional: 2 oz. cream cheese
- 4 lumps Apple Chips
- 2 sheets aluminum foil
Directions:
- Place both rubs in small bowl, add black pepper and mustard to make paste
- Cut salmon and coat fully in paste, cover all over
- Next, roll salmon with bacon, wrap tightly and place on grill in a grilling safe pan
- Assemble apple chips in foil and place on grill to pre-heat
- Heat grill and get some smoke going, cook on 350 to 375 degrees for 15 minutes
- To serve, place barbecue on bottom of plate and serve bombs warm. Consider adding the optional cream cheese dollop on top of bombs.
