MILK CHOCOLATE INDUCTION FONDUE

Yields 1 Quart
Ingredients:
- 32 oz high quality milk chocolate
- 8 oz heavy whipping cream
- 1 tbsp cinnamon sugar
- Assorted fruit (strawberries, diced pineapple, bananas)
- Marshmallows, biscotti cookies, graham crackers, etc.
- 1 tsp kosher salt
Method:
- Using a heavy saucepan with high wall head, add the whipping cream and heat on induction 7 setting or medium high heat. Stir continuously to ensure the milk is heating properly.
- Add salt and cinnamon sugar.
- Once milk is heated (before it reaches a boil), add the chocolate to temper.
- Whisk the chocolate together until it is smooth and shiny.
- Turn induction cooktop down to low or keep warm setting (around a 2).
- Stir occasionally to ensure the correct consistency.
- Place garnish around chocolate and serve.
