How to Get the BEST Fried Shrimp
Here is how to get perfectly crispy and crunchy fried shrimp. We are going to show you how Chef Anthony makes fried shrimp in just minutes on your induction cooktop.
Before starting, preheat 3 cups of oil in a pan on high. You’ll want to peel and devein your shrimp in the meantime. The oil will take anywhere from 7 to 10 minutes to heat up to 375 to 400 degrees.
Tips to keep in mind when frying:
- Use vegetable or corn oil, and not extra virgin olive oil
- If you’re on induction, place parchment paper down on your cooktop to catch splatters
- Your oil should maintain 375 to 400 degrees for crispy and not oily shrimp
Place ½ a cup of regular all-purpose flour into a medium sized bowl. Add ½ a cup of cornmeal, and 2 tablespoons of old bay seasoning to the flour as well. You’ll want to mix these together until they are well blended. Crack 1 egg into a separate bowl and whisk it until the yolk and white are evenly incorporated. Place 1 cup of panko breadcrumbs into another separate bowl.
To test if your oil is up to temperature, take a couple breadcrumbs and sprinkle them into the pan. If they crisp up and rise to the top, then you know you’re ready to start frying. Coat the shrimp in the flour and cornmeal mixture first. Then dip them into the egg bath, and then roll them into your breadcrumbs.
The egg will allow the breadcrumbs to stick to your shrimp better; this is what binds everything together. You can use tongs to place your shrimp in, but if you’re using your fingers just remember to be careful and place the shrimp in partway first before pushing it away into the oil. If you dump your shrimp in that’s how it splatters and causes burns.
Don’t overcrowd your pan because this will decrease the temperature of your oil. You want to make sure your oil stays hot enough that your shrimp crisp up instead of retaining the oil and becoming greasy. The more oil these soak in, the less crispy they are, and they might not even fry. Just be mindful of how much you’re doing at once, and the temperature of your oil.
Each side will take about 1 to 2 minutes before they reach a golden-brown color. Since this is shallow frying, make sure to consistently move these around too so they don’t stick to the bottom of your pan. When these are ready to be pulled out, you can put these on paper towel to absorb excess grease off. Finish these off with 1 teaspoon of salt and pepper, and a squeeze of fresh lemon juice on top. These can simple be served with cocktail sauce, on a sandwich, or in a salad.

Method:
- Preheat oil in pan for 7 - 10 minutes or until reaching 375 - 400 degrees
- Place panko breadcrumbs into bowl
- Mix together flour and corn meal in separate bowl
- Crack 1 egg into another bowl and whisk until yolk and white are evenly incorporated
- Coat shrimp with flour and cornmeal mix
- Dip shrimp into egg bath
- Coat with breadcrumbs
- Place shrimp down gently into oil and fry on each side for 1 – 2 minutes or until golden brown
- Serve right away or refrigerate
