    How To Make Grilled Cauliflower Steaks

    We're going to grill some big cauliflower steaks. If you want your tomahawk steaks, you can have them cauliflower style. You can grill these on your outdoor grill but we mixed it up a bit and used the BlueStar Platinum Series 36" Color Match Free Standing Gas Range with the grill top attachment.     Using your knife, take off any of the leaves from the bottom. Just be careful not to puncture your steaks too much, because we want our steaks to stay in one piece. Cut right down the center. From there go about two inches in to create a steak-style cut. Depending on the size of your cauliflower, you might be able to get a couple steaks out of each head of cauliflower.

    We're going season this the Italian way (it being me). We mixed together a spread for these: 2 ½ tablespoons of white balsamic dressing, 3 tablespoons of olive oil, and 1 teaspoon of garlic. We also mix in ½ teaspoon of Italian seasoning, and then ¼ teaspoon of Montreal steak seasoning. This will really give it that steak feel. You want to lightly dress this since the cauliflower already has a lot of moisture.

    Crank up the heat on the BlueStar Platinum to a medium high heat. Each side will take about 3 to 5 minutes. You also want to quarter turn these in order to get the checkerboard grill mark look. We want these to have a nice golden-brown char after a few turns.

    Ingredients:

    • 1 large head cauliflower
    • 2 tbsp white balsamic
    • 3 tbsp olive oil
    • 1 tsp chopped garlic
    • ½ tsp italian seasoning
    • ¼ tsp montreal steak seasoning

    Method:

    1. Remove outer green stems trimming all excess
    2. Expose core, Trim with sharp chef's knife
    3. Slice cauliflower down the center in half
    4. Take the halves and slice again to yield four portions In a bowl add oil and vinegar
    5. Next whisk in spices to create marinade
    6. Preheat grill to high
    7. Baste Cauliflower liberally on both sides
    8. Grill on high 3 to 5 minutes until slightly charred and tender
    9. (Chefs Note) pierce cauliflower with knife is a great way to make sure it's ready to pull off the grill
    10. Serve warm and enjoy
