How to Cook Fire Roasted Peppers

We’re going to show you how to fire roast peppers, indoors, on the BlueStar Platinum Series 36" Color Match Free Standing Gas Range. The gas burners on this cooktop means the flames will completely surround our peppers for an even fire roasted cook. We’ll also be showing you how to preserve these peppers to incorporate into later dishes.

How to Cook Fire Roasted Peppers

On the BlueStar, turn your burners on a medium heat. You just want the flames high enough that they reach all around your peppers and char the skin. Place the peppers straight down in the middle of the burners. I used 3 peppers for this, but if you wanted one for every burner you could. We just want to blister all of the skin off with the flames. It won’t take long before you start to see a crispy char on the outside. Flip these a few times to make sure all the sides get that smokey black char.

Once you’ve blistered the skin, we can carry-over cook these a little. There are several ways you can do this, you can put these in a brown paper bag; or put them in a bowl, then covered it with tin foil to steam them out for 15 minutes. This will help us to remove the skin later. You can put these under hot or cold water to take off the skin too, but one of the best ways to remove the skin is by using the back of a knife or even a spoon. Use a spoon to gently remove the skin as not to tear up the fleshy part of the peppers. Then cut these each down into about six bigger slices. Make sure to remove the cores and seeds.

This method of cooking will also hold a lot of the nutrients that peppers have. In order to preserve these, we’ll start by adding 1 tablespoon of salt to my pepper pieces. Then pour 3 tablespoons of olive oil into the bottom of a jar or whatever container you plan to store these in. Add the peppers into the jar before filling it up the rest of the way with oil.

These are great for summertime meals. You can put them in salads, pasta dishes, or whatever you want. They’ll add that fire roasted taste to any dish.

  • 3 peppers
  • 1 tablespoon salt
  • 1 ½ cups olive oil
