Game Day Black & Gold Grilled Chicken Wings
Kick off your next tailgate or homegate with these black and gold themed grilled chicken wings!
You’ll want to preheat your grill on high, so you aren’t starting out on a cold surface. Going from cold to hot can cook your wings unevenly. While the grill is preheating, you'll want to place a cast iron pan on the grill to preheat for the gold sauce. Before seasoning your chicken, pat the wings dry because if you throw these on the grill with excess moisture on the skin, you’ll get an uneven cook. You can use drumsticks but we used full wings for more meat.
To richen these up and give the skin a good crisp, drizzle some olive oil on top of them. This will also help the seasoning stick to the skin.
Start off by seasoning these with your choice of a blackening seasoning. This will just consist of whatever spices you want, but we chose to go with a blend of equal parts dried basil, paprika, onion powder, garlic, salt, black pepper, cayenne, and thyme.
Liberally coat both sides of your wings enough that all sides are coated with the blackening seasoning. Once you’ve seasoned them, they’re ready for the grill. Place them flat on the grill on one side to start. Give each wing enough space to cook evenly and let these bake at 500 degrees for roughly 10 to 15 minutes. Make sure to flip your wings and then cook them on the other side about halfway through the cooking process (5 - 8 minutes in).
While you let your wings bake, take your cast iron off of the grill and start the gold sauce. This can go on top of your wings, or it can be served as a dipping sauce on the side at your game day party. Drizzle olive oil into the pan and then add half of a diced onion into the pan.
This will reduce down in our sauce and give it a good kick. For the base add ¼ cup of Worcestershire sauce, and ½ cup of apple cider vinegar. Mix in 1 cup of brown sugar to balance out the spicy with some sweetness. You can’t have gold sauce without the gold, so add a full 6 ounces of mustard (about a whole bottle). Then we’ll tie it together with the wings by adding ½ tablespoon of the blackening seasoning.
We recommend mixing this together before taking it over to your grill, so you don’t spill any on the inside of the grill. We’ll put the sauce on the grill for a 5 – 8 minutes just until it is bubbling, then place it on the cool side to keep it warm. Once the wings have baked for 15 minutes, we are going to turn the right side of the grill up to high and then crisp these up on the outside. You can keep the sauce on the grill to keep it warm or remove it to give you more space.
We want to ensure out chicken is fully cooked, but also has a crispy grilled skin. Cook these for an additional 5 to 6 minutes or until they are fully cooked and have reached your desired crispiness. You can make these wings without sauce, and eat them by themselves, but then they wouldn’t be black and gold. Serve the sauce over the wings or on the side.

Ingredients:
Wings:
- 1 lb raw chicken wings
- 1 tbsp olive oil
Blackened seasoning:
- ½ tbsp dried basil
- ½ tbsp paprika
- ½ tbsp onion powder
- ½ tbsp garlic
- ½ tbsp salt
- ½ tbsp cayenne
- ½ tbsp thyme
- ÂĽ tbsp salt
- ÂĽ tbsp pepper
Gold Sauce:
- 1 tbsp olive oil
- ½ diced onion
- ½ cup worsterser sauce
- ½ apple cider vinegar
- 1 cup brown sugar
- 6 oz yellow mustard
- 1 tbsp blackened seasoning mix
Method:
- Preheat grill on high until reaching 500 degrees
- Place cast iron pan on grill to preheat
- Mix together dry seasonings into a bowl
- Drizzle olive oil on wings
- Coat all sides of wings with blackened seasoning
- Place wings flat on grill and cook for 10 – 15 minutes
- Flip wings at 5 – 7 minutes and cook on the other side
- Mix together all ingredients for sauce into cast iron pan
- Place sauce in pan on grill for 8 – 10 minutes
- Take the sauce off high and move to the cool side once bubbling
- Cook wings on high for additional 3 – 5 minutes to crisp up
- Serve wings with sauce on top or on the side
