- 3 oz low moisture mozzarella cheese

Method:
- Preheat pizza oven with gas or wood until reaching 800 – 900 degrees
- Sprinkle flour on surface and stretch dough with knuckles until flat
- Top with sauce, cheese pepperoni, and basil
- Place pizza on peel and place into oven where heat is centralized
- Rotate every 30 – 45 seconds
- Cook until crust and bottom of dough are a golden brown, and toppings are cooked
