    Get fire roasted pizzas with wood or gas using the Alfa Brio Pizza Oven. With both gas and wood capabilities, this pizza oven is versatile for any cooking need.

    The model we featured is the red model, but this oven comes in copper as well. If you want a quick light where you won’t have to worry about fire management, the gas options will let the flame run to bring your oven up to temperature. The gas lit flame will be on the left of the oven, which will start by heating the left side, and the front, then moving to the middle and the right.The dome shape let’s the heat cascade up and over throughout the entire dome. The inside is designed with porous tiles which absorb and retain heat.

    For this to heat up to 800 – 900 degrees, it will take anywhere from 30 to 40 minutes. If you’re doing this for the first time, you don’t have to cure this. You want the heat to build up gradually to cook off any oils or dust. You don’t want this to go from ice cold to high heat, because this can cause cracks in the tiles.

    The dial on the left side of the oven will be to control the level of the gas flame. Hold this in and you will hear a clicking sound like most gas fired appliances. Once the clicking stops and you see the flames lit, you can release this. This model also comes with a stainless-steel door. If you put this on the front to keep heat in, just make sure you leave a gap so there is airflow to the flame.

    The outer coating on the dome of the oven is made with a weatherproof coating. You can keep this outside and not have to worry about the exterior chipping or rusting. As mentioned before, the tiles on the interior are made of a porous ceramic fiber which insulation the inside. This is a much lighter material than brick or stone.

    The ceramic tiles also will cut back on carcinogens and smoke build up. In the middle is the smokestack which will direct the smoke up and out of the oven. On most pizza models this will be placed directly in the middle since this the where the most heat and smoke will form.

    Don’t forget you can also fire this pizza oven with wood and use different types of wood to infuse your food with different flavors. Start building your wood in the middle of the oven first. If this is under the stack, it will vent properly helping your fire get started. You’ll want to use large dry logs as a base for your fire.

    Place your kindling in the middle of these logs, and then place smaller logs on top. If you want to use a wax fire starter to help this start, you can. Just keep in mind that you won’t want to use any liquid fire starter, since you’ll be cooking here and that can release harmful chemicals into your food.

    Again, you can place the stainless-steel door on the front until your fire is going, just make sure to leave space for air to reach the flame. Once the interior reaches the correct temperature, you’ll want to distribute the wood to the right since this side doesn’t have your gas burner. This oven can get up to over 1000 degrees. You can easily cook things like bread, cookies, or hoagies on lower temperatures anywhere from 275 to 300. Anything you would want to do on your grill or in your oven like burners, or pasta bakes, you can in this pizza oven.

    There is a lot of space to have a whole tray of cookies, a cast iron pan, or even a large pizza. Before you cook, make sure to brush away any embers or ash on the bottom, so you’re not cooking on top of this. We can’t show you this pizza oven without having made a pizza in it ourselves. We made a classic margherita pizza in the oven to show you how fast it is to make pizza once your oven is up to temperature. The best temperature for pizzas is about 800 – 900 degrees. Make sure to rotate this consistently with your pizza turners, and in just minutes you’ll get a golden-brown fire roasted pizza.
