Lamb Chops with Herb Marinate & Mint Chimichurri SKS Wall Oven - Gourmet AI

Marinade:
- 1/2 cup mint leaves
- 1/2 cup parsley leaves
- 2 large garlic cloves
- 1/4 cup tarragon leaves
- 1/4 tsp crushed red pepper leaves
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 lemon zest and juice
- 1/2 cup olive oil
For Cooking (SKS Wall Oven - Gourmet AI):
- 8 lamb chops (1 1/2-2 inches thick)
- 1 or 2 large zucchini sliced ½ inch thick on a bias
- 1 or 2 large yellow squash sliced ½ inch thick on a bias
- 1 or 2 sweet peppers, quartered
Mint Chimichurri:
- 1/4 cup mint leaves, minced
- 1/4 cup parsley leaves, minced
- 2 tbsp tarragon leaves, minced
- 1medium shallot
- 2 tbsp red wine vinegar
- 3 ½ tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
General Method
1.Make the Marinade: Blend all marinade ingredients in a mini food processor or blender until smooth.
2.Marinate the Lamb: Pat lamb chops dry. Coat with half the marinade. Cover & refrigerate for 1 hour.
3.Marinate the Vegetables: Toss vegetables with remaining marinade. Let sit at room temperature for 1 hour.
4.Make the Mint Chimichurri: Combine all chimichurri ingredients in a small bowl and set aside.
Oven Cooking (Gourmet AI Mode)
1.Let lamb sit at room temperature for 10 minutes. Preheat SKS Wall Oven: Gourmet AI → Meat → Lamb → Chops → Medium Rare → Thickness 1.5-2"
2.Arrange lamb and marinated vegetables on a lightly oiled sheet pan or cast iron.
3.Place in oven and follow Gourmet AI prompts. It will manage cooking and prompt for flipping.
4.Cook to 130 degrees F internal for medium rare (recommended). Let rest 5 minutes.
5.Serve with mint chimichurri spooned on top.
