How to Grill Zucchini | Napoleon Grill

We’re going to show you how to cut, grill and enjoy zucchini right at home on your grill. Serve this as a side, on a pizza, or eat a whole zucchini. However you do it, we are going to show you how we grill zucchini on our Napoleon Grill.

Like any other round vegetable or fruit, these can be tricky to cut. To make cutting these easier, take your knife and cut a small slice on one of the sides making it flat. This will keep it from rolling when you try to cut this down.

We’ll cut off the ends, and then make thicker slices down the length of the zucchini. We were able to get about 4 slices out of this one, but this can vary depending on the size of your zucchini. The thicker slices will hold up much better on the grill, and not fall through any of the grates.

Coat both sides of your slices with olive oil. You don’t want to oversaturate these with oil since that can lead to a greasy and soupy product. Season this with just salt and pepper or take it the Italian route like we did. We seasoned each side of these with Italian seasoning and garlic salt. If you wanted to you could also press fresh garlic and herbs into these. Keep in mind how much moisture you add to these if you choose to.

Vegetables are already packed with water, so you want to use dry spices to absorb moisture. If there’s too much moisture, again, these can get soupy. Preheat your grill on high to about 400 degrees. On our Napoleon grill we will use the high sear zone. If you don’t have this on your grill but bring both burners up to high heat. We want this hot because we want the moisture to cook off so these crisp up.

Place these on a 45-degree angle and rotate them every few minutes at 45 degrees to get an even cook and checkerboard grill marks. Each side will take roughly a minute and a half. Bring the burners down after both sides are cooked and let these carry over cook for a few minutes until fully cooked. Grilled zucchini are a great option for roasted and meaty vegetables. Try these on your grill to get a great char and texture on your zucchini.

Ingredients:

  • 1 whole zucchini
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic salt

Method:

  1. Preheat grill on high until reaching 400 degrees
  2. Make a slice in one side of the zucchini so you have a flat side
  3. Cut the zucchini length wise in thicker slices
  4. Coat both sides lightly with olive oil
  5. Season with Italian seasoning and garlic salt
  6. Place on grill at 45-degree angle and cook for 1 ½ minutes on both sides
  7. Bring heat down and carry over cook until completely tender
