How to Cut & Preserve Avocados:
How do you prevent your avocados from oxidizing and turning brown? We’re going to show you a few ways to preserve avocados to keep them green, and the best ways to cut them. We’ll be using two different size avocados; a regular avocado, and a bigger Haas avocado.
Cutting avocados:
Chef’s Tip: If you find that your avocados are rolling away as you try to cut them, take a small slice off of the peel on one of the sides. Make it a flat divot in the peel of the avocado. Then you’ll be able to cut these without them rolling away if you do it flat on your cutting board.Truly, you can do this with any type of round fruit or vegetable to make them easier to cut.
Take the end of your knife and make a small cut starting on one of the sides. Then allow the knife to glide through as you rotate the avocado. You want to guide the knife in a circle around the avocado, so it meets the original cut. Once you have a circle cut all the way around the avocado, just twist the two sides and you should get two pieces.
You’ll then see the pit on one of the sides. This can be the trickiest part. If you want to keep the perfect slices you don’t want to be digging into the avocado to get the pit out. One way to remove these easily is you can take the back end of the blade of the knife, pop it into the pit, and you should be able to pull it right out (It does help too if your avocados are ripe). If you’re not comfortable doing this though, you can easily wedge the tip of the knife under the pit, and it should pop right out.
Chef’s Tip: If you find you’re having trouble removing the pit, your avocados may not be ripe enough. Store them in a paper bag for 3 days to help them ripen.
Making slices will be easy from here. Just take the tip of your knife and make lines going down the length of the avocado. You can also go the width of the avocado to get little cubes.
You can remove the slices by pushing on the back of the peel or run a spoon along the peel and scoop them out. Preserve and prevent oxidation: Fill up a bowl with some cold water and all you have to do is submerge your cut avocados in the bowl and store them in your refrigerator. This is probably the simplest way to keep them from turning brown.
Another method is if you happen to have fresh lime, cut this, and squeeze the juice onto the freshly cut avocado. You can also rub the cut lime onto the inside of the avocado. This will not only preserve these, but also add some extra flavor. Avocado and lime go very well together especially for something like guacamole. Hopefully this helps you prevent your avocados from turning brown and lengthen their shelf life.

Method:
Cutting:
- Make a starting cut in one side of the avocado
- Run knife in a circle around avocado until reaching initial cut
- Twist apart to get two sides
- Hit back of knife into pit to remove, or place tip under pit and pop it out
- Use the tip of the knife to make cuts along the length of the avocado
Preserve:
- Place freshly cut avocados into a bowl of water and place in fridge
- Rub/squeeze lime juice onto freshly cut avocados
