How To Cut & Preserve Asparagus
Here's some quick tips to help you prepare and preserve asparagus to double the shelf life and make cooking a breeze.
If you plan to keep your asparagus in the fridge or on your countertop, fill up a bowl with a few inches of water and place the bottom of the stocks into the water. Keep the bottom tips submerged in water. This will ensure the ends are nice and crispy and crunchy.
Over time, the top gets dried out first because the moisture in the water has to run all the way up to top. Instead of wrapping it in paper towel and water, just keep it in an inch or two of water. Cutting asparagus can sometimes be tedious, so if you want an alternate way to prep your asparagus, try breaking them instead. Look for the natural seam in the stock and bend it until it breaks. It’ll snap off perfectly, and this promotes uniformity throughout all of your pieces of asparagus.
If you don't have a peeler but want to peel your asparagus, just take the back of the knife, and score down the stalks. This will get rid of the scales and reveal the fiber in these. This is just a way to get rid of their outer layer. Gives you that bright green for all the sweetness.
Another quick preparation method: Put your knife on a 45-degree angle on the end of the stalk and then cut. When you cut at an angle these helps keep the asparagus from curling up at the ends during the roasting or dry heat cooking method.
