How to Chop Garlic

by Chef Anthony Marino

How to Cut Garlic:

We’re going to walk you through the easiest ways to cut and peel garlic. We used medium-sized garlic heads to demonstrate these techniques.

Take your knife and cut off the top and bottom of the head of garlic. The cloves will then be easier to remove, and some might even fall out. Typically, you can just push these out.

Each clove will still have their own peel around it. So, what you can do to get this off easier, is lay your knife flat on top of them and press down. This will help release the peel from the clove itself. You don’t have to smash it, just press lightly (unless you are doing smashed garlic).

Cloves can be tricky to cut since they aren’t usually completely flat. A way to make these easier to cut so they don’t roll around, is by taking your knife and fileting these in half. Once these are more flat, you can lay them down and start to dice them. If you rock your knife back and forth, you can dice your garlic into fine pieces.

You would also dice the garlic if you’re making smashed garlic. The only difference is between dicing it, you want to lay your knife down flat on the pieces and press and paste it down. So, you would chop, and then paste, and repeat until you reach the desired texture. This was just a few quick and easy ways to cut garlic. Hopefully this helps you when prepping your garlic for cooking.

Ingredients:

  • 2 heads garlic

Method:

Diced:

  1. Cut top and bottom off of head of garlic
  2. Push cloves out of main peel
  3. Take the flat side of your knife and press on the cloves to help separate the peel from clove
  4. Filet the cloves in half to make them flat
  5. Dice them down to desired size

Smashed:

  1. Follow same steps for dicing, but make sure to press and paste in between cutting
