How to "Butterfly" Shrimp
What is one of the best ways to prep shrimp for an even cook? We are going to show you how to butterfly your shrimp, so they are flat for any cooking surface.
Take a sharp paring knife, or any knife you feel comfortable with using. Lay the shrimp down flat and cut halfway through the shrimp on the flat side. Make a cut along the entire length of the shrimp, from head to tail. You should cut just deep enough that it doesn’t cut it in half, but let’s you flatten the shrimp.
This also makes it easier for you to remove the vein. If you choose to, you can remove the shells, or leave them on. The shells also ensure they don’t curl up too much in the cooking process.
You can cut these one at a time, or here another tip for you: line up a few in a row and as you cut down the middle of each, push them away. Be careful not to do this too quickly if you aren’t experienced using a knife.
Cook these right away or store them in water in the fridge. If you put them in water this will rinse any of the dirt off. Butterflying your shrimp is a great, easy method to ensure that you're cooking your shrimp properly.
