    Chef Anthony's Recipes: Baked Ham & Mac and Cheese

    This holiday season, Chef Anthony has got you covered. Whether you’re entertaining a small dinner party or feeding your immediate family, these recipes are bound to charm even the grinchiest of scrooges.

    So, preheat that oven and take heed to this step-by-step guide for making a savory baked ham and a delectable mac and cheese.

    Recipe #1 - Baked Ham with Mustard Glaze

    Ingredients:

    • 1 half ham bone, 7 to 8 lbs
    • 1 tablespoon ground clove
    • ¼ cup brown sugar
    • ¼ cup maple syrup
    • 3 tablespoons Dijon mustard

    Directions:

    Ham

    1. Preheat oven to convection roast at 325 degrees
    2. Score ham crosshatch pattern and remove any excess fat
    3. Sprinkle clove over top of ham
    4. Place in roasting pan tent loosely with foil if not using convection (if you are using convection omit this step)
    5. Bake until an internal temperature of 135 degrees (rule of thumb is generally 20 minutes per pound 2 to 2 ½ hours total)

    Glaze

    1. In medium pot, combine Brown sugar, maple syrup and mustard
    2. Whisk all ingredients over medium heat until smooth
    3. Pour over ham and serve

    Recipe #2 - Macaroni and Cheese (serves 6)

    Ingredients:

    • 1 lb dried pasta (penne)
    • ¼ cup flour
    • 3 tablespoons Dijon mustard
    • 2 dashes hot sauce
    • 3 cloves roasted garlic chopped fine
    • 2 cups milk
    • ¼ teaspoon truffle oil
    • ¾ stick butter
    • Salt and pepper to taste
    • 10 oz shredded cheese
    • ¼ breadcrumbs
    • ½ cup shredded cheese

    Directions:

    1. Boil pasta until al dente, drain and place in bowl
    2. Start the sauce by melting the butter and truffle oil in the same pot you used for the pasta (you are going to need the extra room to coat all the pasta)
    3. Gradually add the flour to create the roux
    4. Lower heat and cook out flour about a minute
    5. Add mustard and hot sauce, along with garlic (an option here is to deglaze with white wine, if so, a quarter cup will be perfect)
    6. Add milk (cream can be used as well) raise the heat to medium and begin making the sauce
    7. Stir until incorporated
    8. Fold in pasta coating evenly with cheese sauce
    9. Lower the heat and add the cheese
    10. Fold until completely melted
    11. Taste and season with salt and pepper accordingly (I like to season this dish now to adjust for the saltiness in the cheese)
    12. Place pasta in an oven-safe baking dish and top with breadcrumbs and remaining cheese
    13. Bake in 350-degree oven for 15 to 20 minutes until golden brown and bubbly
    14. Serve and enjoy!
