Sweet Potato Casserole Recipe | Baked & Broiled in the Thermador Wall Oven

What you’ll need for this recipe:
- 5 lbs sweet potatoes
- 1 tsp pumpkin pie seasoning
- 1 ½ cups brown sugar
- 1 tsp vanilla
- 1 stick butter
- 1 tbsp salt
- 1 tbsp pepper
- ½ cup heavy cream
Preheat your oven to convection bake at 375° and place your potatoes on a baking sheet. These will bake in the oven until they are fork tender which will take about 30 to 45 minutes. We want them to be soft so we can easily separate the skin and the inside of the potatoes.
After about 45 minutes, or once these are soft, we’ll pull them out of the oven. Make a slit in the skin to make it easier to separate the skin. It might be easiest to push the inside of the potato out too, but you’ll want to remove all the skin and place them in a large bowl.
Use either a fork or a spatula to mash these until they are smooth. Take about half of your brown sugar and mix this in with the potatoes. Next, we will splash in the vanilla, sprinkle in salt and pepper, and ¾ of a stick of butter. Mix everything well until the butter has melted and everything is evenly incorporated. To thicken these up and give them a creamy texture, add about ½ cup of heavy cream into the bowl and mix it well.
Take your sheet pan and spread the mixture out evenly. Take the rest of your butter and place chunks of it all around the pan on top of the potatoes. It wouldn’t be sweet potatoes casserole without the marshmallows, so place a layer of any size marshmallows on top. Finish this off by sprinkling the rest of your brown sugar over your casserole.
Now this will go back in your oven on broil at 550°. Keep that oven door closed, but make sure to keep an eye on this as it will only take anywhere from 30 seconds to 1 minute. All you’re doing is browning the marshmallows on top and melting the rest of the butter.
This is now ready to be served as everyone's favorite side at the next holiday dinner.
Method:
- Preheat oven on convection bake at 375°
- Place potatoes on a baking sheet, and bake for 30 to 45 minutes or until tender/soft
- Remove skin by pushing potato out, or peeling it off
- Mash inside of potatoes in a large bowl until smooth
- Add vanilla, brown sugar, ¾ stick of butter, and salt and pepper
- Mix ingredients until smooth
- Add warmed heavy cream and mix well until potatoes are smooth
- On a sheet tray, spread the potatoes out evenly
- Lay marshmallows and the rest of the butter on top of whole sheet of potatoes
- Sprinkle the rest of the brown sugar on top
- Broil casserole at 550° for 30 seconds – 1 minute
