How To Make Candied Bacon | Sweet & Spicy
One of the best ways to make bacon is in convection, on a wire rack. We’re going to show you how to make sweet and spicy candied bacon.

True convection is not only easy, but it gives even heat from all sides for an even cook. We'll be using the Wolf E Series Transitional 30" Stainless Steel Built in Single Electric Wall Oven for this version of candied bacon. We used some thick sliced applewood bacon, but you can use any type of bacon. Make sure when shingling your bacon on the rack that you space it out.

Chef’s Tip: Spacing out your bacon along the width of the tray means each piece will get an even cook. This allows for air to move all around your pieces, but also ensures no edges slip through the rack.
After prepping the bacon, you can move onto mixing together the sauce. Add 2 tablespoons of spicy Dijon mustard to a medium mixing bowl. Next 1/4 cup of barbecue seasoning. Add 1 tablespoon of olive oil instead of butter. It will just work better for the glaze. Then add 3 tablespoons of honey.

Then use a spoon to ladle the sauce onto the cuts and use the back of it to spread it all along the top.
Chef’s Tip: You only want to coat one side. If you coat the back too, you’ll lose the flavor of the bacon itself. We want our oven to be at 350 degrees and depending on the thickness of your slices it will be anywhere from 10 – 20 minutes.
The final product: Candied bacon. Even the back is cooked and coated in our sauce. This is what we want to see in true convection. Crispy from edge to edge and golden. It is packed with sweetness, and heat from the barbeque. This recipe might make you want to eat this whole pound of bacon.

Ingredients:
- 1 pack thick sliced bacon
- 2 tablespoons spicy
- Dijon mustard ¼ cup barbeque seasoning
- 1 tablespoon olive oil 3
- tablespoons honey
Method:
- Preheat oven to 350 degrees Fahrenheit
- In a separate bowl, Mix together spicy Dijon mustard, barbeque seasoning, olive oil, and honey
- Mix well until ingredients are completely blended together
- Space bacon out on a raised rack on top of a tray
- Coat just the top of the bacon with the sauce
- Cook bacon in the oven for 10 – 20 minutes
