The Difference Between Down Draft and Over Head Hoods

From hoods, over the range microwaves, downdraft systems and recirculating options, not all ventilation is created equal. It is one of the most overlooked appliances in the kitchen, yet it is one of the most important. The main purpose of ventilation is to remove and collect cooking odors, grease and moisture from the air. Here are some things to consider when selecting what type of ventilation is right for you…

For the best results choose an overhead hood or over the range microwave that can be vented to the outside. This will move smoke and moisture outside of the home and allow clean air into kitchen, along with keeping grease off of surrounding kitchen cabinets. It is always good to check building codes or with your HVAC installers in case your vented unit cannot be above a certain CFM (cubic feet per minute) or if a makeup air damper will be needed. There are many different options when it comes to overhead hoods so you will surely find something to fit your design.

A down draft system may be your only option with some installations. This is very common when installed on a kitchen island. Most downdrafts are vented outside, but some can use a recirculating kit if necessary. There are two types of down draft systems; one is built-in as part of the cooktop or range. This is not the most efficient type of down draft. It tends to pull flames and heat towards the middle of the cooking surface and away from the food. It is also not very effective on taller pots.

The second type of down draft is a telescoping or pop-up style. These are installed behind the cooking service and remain flush with the unit until needed. With the use of a remote or the push of a button, these vents can rise 6” – 14” (depending on the model) above the cooktop or range. This is the most efficient style for a downdraft system, but you may still run into issues with taller pots if the vent rise is not tall enough.

Overall the best type of ventilation you can use is an overhead hood that is vented outside. If having a recirculating unit is your only option, make sure you are cleaning the charcoal filter and replacing them when necessary to keep the unit running efficiently. Majority of the filters and baffles in your ventilation will be easy to remove and dishwasher safe. Make sure to always double check your use and care guide before placing them in the dishwasher.
